Opal’s Oysters is named in honor of the Black family matriarch and host extraordinaire, Opal Faye Hendershot. The restaurant is a living love letter to the Hendershot Family’s coastal gatherings, which have taken place in Corpus Christi every July since 1978. Each year, several generations of extended family have come together to swim, play, shoot fireworks from the beach and gather around the table for family meals. Every Saturday night was spent sitting on the seawall, eating homemade ice cream with family and friends.  They were carefree, sun-soaked days full of joy and community. The best days.
